This is no supermarket chocolate – imagine how a wild blueberry from the forest explodes with so much more flavour than its farmed kin. The cacao beans of this chocolate bar uniquely come from wild trees, rather than farms, growing in the Bolivian forest. We are incredibly privileged to be able to share this truly special and rare chocolate with you.

We are proud to offer our single-origin chocolate as a transparently traded product through our supply partner Uncommon Cacao. This means that you, as a consumer, can verify the prices paid along the supply chain, ensuring cacao farmers, and everyone else, are paid honestly, openly, and fairly.

Bolivia 73% Dark Chocolate bar is made using cacao ethically sourced from Itenez Wild Harvest.

Tasting notes: Vanilla buttercream → Papaya → Jasmine

Ingredients

Organic Cocoa Beans, Organic Cane Sugar

May contain: Dairy, peanuts and tree Nuts

Learn About Itenez

Itenez Wild Harvest Cacao is from the region near Baures, Bolivia, close to the Reserva Forestal Itenez and the Río Blanco.

These beans are very rare, native Beniano cacao from the wild Itenez forests. They are harvested from wild cacao trees growing naturally in the Itenez forests, gathered and processed by local campesinos. According to Heirloom Cacao Preservation (HCP) genetic tests, the cacao is 97.3% Heirloom Beniano Boliviano with 2.7% Upper Amazon Forastero.

An initiative to support collectors of native, wild cacaos was started by Agricultural Economist and General Manager of Rainforest Exquisite Products S.A. (REPSA) Volker Lehmann, who was responsible for pioneering the wild cacao trade starting in 2004, increasing the quality of the harvest process and ensuring economic gains for all involved.

The Itenez wild harvested Bolivian cacao beans are very small beans with big flavour: Deep, rich, robust and floral. We are thrilled to be able to partner with the communities in Bolivia to offer this unique and special cacao.

Itenez is a Wallace Craft Chocolate single origin supplier, with these beans representing the South American region of cacao production.

About Wallace Craft Chocolate

Wallace Craft Chocolate is a small batch bean-to-bar chocolate company from Victoria, BC, Canada. We make the best tasting stone-ground chocolates and confections using 100% transparently traded chocolate from our single-origin sources. Our Founder, Mark Wallace, has spent the better part of the last decade across Africa, working to help farmers produce high-quality cocoa and sell their cocoa beans to specialty chocolate makers so they could make a better living wage. Upon returning to Canada, he maintained his relationship with cocoa producers, and now buys beans directly from these farmers for a good price. Wallace Craft Chocolate has a deep connection to the West Coast, using combining local ingredients with interesting cocoa beans for exquisite and interesting flavour combinations. We strive to uphold the highest standards in transparency, integrity, and sustainability in everything we do.
