A higher quality tortilla made with Stone Ground Certified Organic Corn, grown in Armstrong BC, using Chef Israel Alvarez Molina’s technique, inspired in the traditional Mesoamerican Nixtamalization process.
Unlike the majority of tortillas in North America, MAiiZ Tortillas use corn kernels to make fresh Nixtamal Masa Dough instead of factory produced powdered mixes. This Nixtamalization process maintains the nutritional integrity increasing the body’s ability to absorb those nutrients and preserves the flavour in the tortilla.
MAiiZ Nixtamal Tortillas have a flavour, aroma, texture and an elasticity that is lost when using masa that has been dried into flour. Our Tortillas feel and taste better.

Chef Israel Alvarez Molina hails from Mexico City where Nixtamal Tortillas are essential to the cuisine, culture, and spirit. A reverence for the skillset, knowledge, and respect required to make high-quality, delicious Nixtamal Tortillas from scratch was instilled in him while he worked at Pujol where he rose to the position of Chef de Cuisine. His love for all that Nixtamal Masa provides has, of course, been in his heart forever.
It is this love that he carried with him when he moved to Canada in 2008 that inspired him to start MAiiZ Nixtamal Tortilleria. Chef Israel finds immense joy in making MAiiZ Nixtamal Tortillas in the heart of Victoria’s Chinatown with Organic BC Corn. His hope is that everyone, from the curious home-chef to those like him that grew up with Nixtamal and miss it dearly, will love MAiiZ Tortillas as much as he does.
Nixtamalization is an ancient process by which the dry corn is cooked with slake lime to break down the husk surrounding each kernel. This process allows the human body to properly digest corn while also imbuing it with accessible calcium. The Association of Integrated Development “OX EEK” Santa Maria Cahabón (ADIOESMAC), founded in 2004, cultivates and sells cacao, cardamom, cinnamon, and chili peppers.
Perched on a mountaintop overlooking the extensive jungled hills of the Cahabón region, the association processes cacao using cascading wooden fermentation boxes and a combination of greenhouse dryers, raised bamboo decks, and drying patios.
Adioesmac has been exporting fine cacao since the early 2000’s. Their cacao beans are distinctively large compared to nearly any other beans you will ever see, and have been whimsically referred to as ‘potato beans’ as a result (referring to their size, and thankfully not their flavour!).
The association plants more cacao trees every year, most of which are planted to reforest areas that had been cleared for the production of “milpa” (or corn) and bean production.
Adioesmac is a Wallace Craft Chocolate single origin supplier, with these beans representing the Central American region of cacao production.

Adioesmac has been exporting fine cacao since the early 2000’s. Their cacao beans are distinctively large compared to nearly any other beans you will ever see, and have been whimsically referred to as ‘potato beans’ as a result (referring to their size, and thankfully not their flavour!).
The association plants more cacao trees every year, most of which are planted to reforest areas that had been cleared for the production of “milpa” (or corn) and bean production.

Upon returning to Canada, he maintained his relationship with cocoa producers, and now buys beans directly from these farmers for a good price. Wallace Craft Chocolate has a deep connection to the West Coast, using combining local ingredients with interesting cocoa beans for exquisite and interesting flavour combinations. The Philippines has a long history of cacao farming; the crop was introduced in the 1700s when a Spanish colonist brought seedlings over to the islands from Mexico. Since then, it’s common practice for Filipino communities to consume cacao as drinking chocolate, similar to Maya communities throughout Mexico, Belize, and Guatemala.
Kablon Farms is a 70 hectare bio-diversified, sustainable farm in South Cotabato, in Davao, Philippines. The farm is owned by the Pantua family and the crop production is managed by the eldest sibling, Ernesto Pantua Jr. (who prefers to be called Jun).
With an uncompromising emphasis on the highest quality of specialty cocoa beans, Kablon Farms is leading a change in the low-cost/low quality norm seen throughout the Philippines.
