What is 'Panela'?
Owner and head cookie maker at Panela Lemon, Marilyn, is originally from Colombia. She learnt the art of baking from her mama and, tapping into her passion for a healthy and natural lifestyle, combined her desires and skills to create a line of healthier vegan treats that didn't skimp on flavour. Marilyn decided to use coconut sugar and 'panela', an unrefined whole cane sugar, typically found in Central and Latin America to sweeten her cookies.
Panela is a solid form of sucrose derived from the boiling and evaporation of sugarcane juice.
What's the best way to enjoy a Panela Lemon cookie?
Each Panela Lemon cookie has an indulgent filling and, because we are a sucker for decadence, we think it's best to try to recreate the 'freshly made' experience. Toss your cookie into the oven for 3-4 minutes at 350°F or 10-15 seconds in the microwave. This will make the cookie super soft, the filling melty and all around contribute to the best cookie experience ever. That being said, the cookies are just as delicious at room temperature.
