Try pickling! Well, quick pickling. This fast and easy way of preserving your veg is perfect for those odds-and-ends veggies. Pickled veg can be added to salads, into sandwiches, hearty bowls, and more.
Pickling veg ranges in variety and the flavors can be customized. Spicy carrots, garlicky cauliflower, sour radishes, or red onions. The list goes on. Try this quick pickle base and add your own twist!

Ingredients
1 Cup Vinegar - apple cider or white vinegar work great.
1 Cup Water
1 Tbsp Sugar
1 Tbsp Salt
Directions
Step 1
Bring equal parts water and vinegar to a boil with salt and sugar.
Step 2
Thinly slice your choice of vegetable. A mandolin may come in handy! Just watch your fingers.
If adding garlic for flavour, also thinly slice!
Step 3
Place thinly sliced veg and flavour ingredients into a clean jar.
A well-cleaned pasta jar or old pickle jar works great.
For flavour components, add in garlic, dill or other fresh herbs, whole peppercorn, chilis, or any other ingredients you think will compliment the pickled veg.
Step 4
Pour boiling liquid into jar to fully cover the pickling veg. Cover and let cool on the counter before placing in the fridge.
Your quick pickles should keep for a month but with how tasty these quick pickles are, they will be gone way before that!
