About Coal Creek Roasters
We are a family of bean to bar craft chocolate makers residing in Tahsis, BC. We roast organic cacao beans from Guatemala and turn them into chocolate one small batch at a time. We are passionate about chocolate and believe it should be pure, strong, and delicious! Our single origin approach, and the fact that the only other ingredient we add is a little organic cane sugar, lends a unique flavour to the bars we create. This flavour transfers beautifully to your palate as it melts in your mouth or to any baking or cooking done with our chocolate.

Emmanuelle studied at the Art Institute in Vancouver BC and then continued her apprenticeship at Chocolate Arts in Vancouver BC. After her time at Chocolate Arts, she pursued an intensive VIP chocolatier course at world-renowned Savour Chocolate and Patisserie School in Melbourne Australia.

The Association of Integrated Development “OX EEK” Santa Maria Cahabón (ADIOESMAC), founded in 2004, cultivates and sells cacao, cardamom, cinnamon, and chili peppers.
Perched on a mountaintop overlooking the extensive jungled hills of the Cahabón region, the association processes cacao using cascading wooden fermentation boxes and a combination of greenhouse dryers, raised bamboo decks, and drying patios.
Adioesmac has been exporting fine cacao since the early 2000’s. Their cacao beans are distinctively large compared to nearly any other beans you will ever see, and have been whimsically referred to as ‘potato beans’ as a result (referring to their size, and thankfully not their flavour!).
The association plants more cacao trees every year, most of which are planted to reforest areas that had been cleared for the production of “milpa” (or corn) and bean production.
Adioesmac is a Wallace Craft Chocolate single origin supplier, with these beans representing the Central American region of cacao production.

Wallace Craft Chocolate is a small batch bean-to-bar chocolate company from Victoria, BC, Canada. We make the best tasting stone-ground chocolates and confections using 100% transparently traded chocolate from our single-origin sources. Our Founder, Mark Wallace, has spent the better part of the last decade across Africa, working to help farmers produce high-quality cocoa and sell their cocoa beans to specialty chocolate makers so they could make a better living wage. Upon returning to Canada, he maintained his relationship with cocoa producers, and now buys beans directly from these farmers for a good price. Wallace Craft Chocolate has a deep connection to the West Coast, using combining local ingredients with interesting cocoa beans for exquisite and interesting flavour combinations. We strive to uphold the highest standards in transparency, integrity, and sustainability in everything we do.
