About Wychbury Ave
In 2011, I biked over 2000 km on a cycling tour with thirteen other women on The Otesha Project to teach communities about environmental sustainability and social justice. After delivering over 30 performances about how to reduce unnecessary plastics in our everyday life and prevent human rights abuses, I wanted to put those solutions into practice and decided to make my own bath and body products with fair trade and ethically sourced ingredients, using only plastic-free and reusable packaging. In 2014, in the middle of a maternity leave from teaching, I transformed my basement into a soap-making studio and joined a community of like-minded individuals who were starting a farmers market.
Starting with tiny batches of only 7 bars at a time, I made, cut and packaged each batch myself, printing my own labels and learning the ins and outs of business as I went. I found a used bicycle trailer, and started towing my entire market setup back and forth to the Esquimalt Farmers Market each Thursday, began stocking local shops in Victoria with my soaps, and I’m now selling from my online shop at www.wychburyave.com, and at over 12 retailers on Vancouver Island. My dream began as a mission to show others how to enjoy the products we love while reducing waste and caring for people and the planet at the same time. I continue to provide vegan, palm oil-free, and fair trade products through my shop and educate others through workshops and daily insights on social media. Come join me! About Taco Revolution
Ixim was started as a passion project by Michelle Paez and PJ Frayne out of their small home kitchen on Gabriola Island in 2015. Having returned to Canada from living abroad in South America, they missed the wonderful tortillas and other fresh foods that they had become accustomed to. Searching grocery stores all over Vancouver Island, they couldn't find a corn tortilla that came close to what was commonly available in Mexico. So, they purchased a small tortilla press and started making their own.
Several members in their new Island community heard about the tortillas that PJ and Michelle were making, and invited the couple to set up a booth at the Gabriola Farmer's market. The tortillas were an instant hit, and the passion project quickly turned into a hobby business. Within a year, Ixim Foods Inc was incorporated and was selling tortillas from 4 different farmer's markets around the Island. But tortillas weren't enough. People wanted ready-to-eat tacos! Beginning in the second year, the Taco Revolution food truck was built and put into service. It was a huge hit and quickly attracted a large following. Ixim Foods was no longer a hobby business.
The building of a commissary kitchen quickly followed, and with it an expanded product line. Over the course of the last few years, Taco Revolution has grown to become a highly regarded and recognized brand of Mexican Food products on Vancouver Island. And we continue to grow. -

Single-Origin Instant Coffee - Fernwood Coffee Company (20g)

Fernwood Coffee started off roasting in what was once a bicycle courier call centre. We’re more than a coffee shop: we’re a hub for the Fernwood community, a routine morning stop, a weekend ritual, and an active member of our community.
Fernwood Coffee was established in 2007 after we took over The Parsonage Café. Intrigued by the 1930s German coffee roaster sitting behind the café’s counter, we enrolled in world-renowned roasting courses and workshops everywhere from Idaho to California. We traveled extensively, apprenticed with highly regarded baristas and roasters, and researched exhaustively to roast, brew, and pull the finest coffee possible. Since then, a lot’s happened: we purchased a much more modern roaster, traveled to and judged a number of international barista competitions, trained world class baristas, and won some awards. We've worked hard to make our café and roastery a cultural staple in Fernwood. -

10" x 5.5" Western Red Cedar Grilling Plank - BC Coastal Grilling

Cooking using Western Red Cedar (Thuja Plicata) wood is a tradition handed down throughout the years from the First Nations people where it was found that the wood easily split with primitive tools, soaked up water to prevent burning and in addition, imparted a slightly sweet, smoky flavour to the food source being cooked. The most common type of food to cook on a WRC Plank is Salmon, however many other types of fish, seafoods, meat, poultry, and vegetables work well, too!
About The ProductThe WRC wood used is sourced primarily from the Coastal Forest Region and purchased in Rough Green Lumber form, the wood is first kiln or air dried to remove most of the moisture in the wood. Then planed on all 4 sides through a moulder and chamfered or rounded on the top 2 edges to reduce the chance of obtaining slivers. It is then sanded to round the corners and chamfered on the ends for appearance. Each Plank is then Logo Branded, wrapped, labelled, ready for delivery to you the Consumer.
Having been Kiln or Air Dried that removes the moisture in the Cells of wood, the Plank(s) when soaked in any liquid (predominantly water), will soak the liquid back into the cells.

The planks are 9/16” (14mm) thick, which is great for any type of food, but necessary for thicker cuts of seafood, poultry, and meats. Each plank can withstand 2-3 uses on a BBQ, and multiple uses in an oven when directions are followed correctly.
Directions for Use
The first step in creating a memorable West Coast meal is to soak; this means to completely submerge the grilling plank in water or any liquid of your choosing. Soak for 2-6 hours or, ideally, overnight, if you plan ahead. The next step is to prepare the food. If using BC Coastal Grilling Rubs: measure out 1-2 Tablespoons of oil to make a paste. Slather the food with the rub and set aside.
While preheating the BBQ on High for 5-10 minutes, wipe excess water from the plank and place the food skin-side down (if seafood).
Turn one side of the BBQ down to Low and place plank on this side. Leave the other burner(s) on Med-Low and close the lid. You will hear popping and see smoke start to come from the BBQ – this is good! Check the plank frequently for flare-ups, which will occur because of the drips from the food. Use a water spray bottle to stop any flare-ups. Ideally, the plank should be smoldering, not flaring. Smoldering creates the smoke that gives the food a wonderful smoky flavour.
It is unnecessary to flip or turn seafood or veggies when plank cooking. Meats and poultry must be flipped at the halfway point in order to be cooked through.
Remember that the liquid in the plank will steam the food; this means the food will be nice and moist and might not appear to be done. Do the flake test with seafood, and check meats and poultry as you would on a regular BBQ (using a food thermometer is a great idea). Generally, cooking time will be doubled because of the indirect cooking method. Usual cooking times for seafood will be 5-6 minutes per inch of thickness.
If grill marks are wanted for appearance, a quick searing is suggested just before plating. This works well for steak, pork, and poultry, but isn’t recommended with seafood.
Other Tips:
- Can all be used in the oven as well as the barbeque.
- Placing tin foil underneath the plank during cooking will help increase the lifespan of it.
- Another way to keep the longevity of your plank is to turn the burner(s) directly underneath the plank off, and just use adjacent burners as form of indirect cooking.
- Always use care when handling hot grilling planks. If serving directly to the table, placing them on a baking sheet or appropriate tray is suggested Grilling planks
